I’m lying in bed on a Sunday night, wedged precariously between two cats (the slightest movement will cause one to wake up and give me the most evil-est catly glower ever known to man), glasses on, typing away.  Typically I’d be preparing invoices from the prior week or some other pre-Monday drudgery.

But this is no ordinary Sunday night. Oh no.

Wow.  It’s been the ultimately crazy month, between moving cross-country, starting a new job and a business, remodeling, and my sister’s wedding next weekend….I’m, well… tired, for lack of a better word!  More details of that to come in my “Day in the Life” post next week (aren’t you guys loving that idea? Much as I wish we could say Dr. Dave and I come home every day, fix a lovely homemade dinner, and sit at the dining table gazing into each other’s eyes while having a stimulating conversation, such is not always the case.  In fact, the majority of the time we give each other a peck and a hug, make dinner, and proceed to plop down to eat in front of the television à la Américaine.

My hair has not changed since I was 13.

Roasting Beets

Beets are, seriously, a superfood. Not only are they amazingly delicious (buttery, sweet, tender yet with a great texture), they have some nutritional benefits that just can’t be beat! (Ha ha, get it?)
