Roasted Red Pepper Sauce

A big “Thanks!” to all who followed along last week with my “Day-in-the-Life“… ‘Twas a fun little exercise for me, and I hope y’all enjoyed it as well!

Today I thought I’d share the recipe for the Roasted Red Pepper Sauce I made that Thursday… It’s probably my favorite recipe I’ve ever modified to make my own and has quickly become a kitchen staple for us.

Day in the Life: Kate

Thursday.  A Hair-Washing Day.  {I’m an Every-Other kind of gal unless I’ve been exercising outside in the Texas heat.} Thus, my wake-up call comes at 6:24.  This particular morning, The Boom decides she’s not feeling the snooze button and whines and frantically wiggles her bum until I haul myself out of bed to let her out.  I start the coffee.  6 cups… all mine!  Evs shuffles to the guest room to catch 30 more minutes of Zzz’s since my bathroom …

Rent to Own?

Evs and I have been renting an adorable (baby blue!) painted brick cottage for about a year and a half. It really has been the perfect newlywed house for us – we love the vintage charm + the updated features!

However, while we probably could talk our landlord into selling, we’ve finally come to the realization that this house just isn’t going to be the recipient of our first mortgage payment.  Our current gripes:

Luxe Facial Treatments… On the Cheap!

We’ve all heard mention of the “Recessionista,” and I’d bet a shiny Buffalo nickel that most of us have employed some creative tactics in order to look fashionable while tightening our belts!    But don’t leave your face out of all the fun… Everything you need to pamper your pores is waiting right in your fridge (or grocery aisle)!

I’ve used the following “recipes” for years.  If you can believe it, …

With the Summer tomato crop just around the corner, it’s the perfect time to start thinking “outside the jar” for supper!  The following recipe is near and dear to my heart as it’s the first one I’ve ever dreamt up without any guidance whatsoever… Yeah, yeah, I know it doesn’t take a Top Chef to create a recipe for tomato sauce, but don’t rain on my itty-bitty parade, okay?

A (Re)Purpose for Everything

I feel I’ve always been somewhatconscientious when it comes to resources…  I’d rather turn on the fan or put on a sweatshirt than fiddle with the thermostat; I’m a diligent recycler and reuser; I gripe at Evs if he turns the shower on and then starts shaving (I’m sorry but it does not take 5 minutes for the water to “heat up”).

But having recently made the switch from somewhat-corporate work environment to the non-profit sector, my awareness for wastefulness has heightened exponentially… …

Our first wedding anniversary is quickly approaching – I cannot believe that its already been one year since we said “I do!”  {See the full wedding recap here, if you’re curious!}

{Historic Covered Bridge in Oregon’s Williamette Valley}

Our big celebration will take place during our week-long trip to Oregon at the very end of the month, but we still deserve a few small tokens to commemorate our very first year on March 28th, yes?

Yes!

While I’m not always a stickler for antiquated …

Veggie Chicken Verde Enchiladas

Posted 01/26/2010 by Kate in Cooking and Food, Recipes \ 1 comment

A month or so ago on Elefantitas Alegres, I extolled the virtues of my hard-earned Enchiladas Verdes con Pollo – a recipe that took me many moons to create and perfect.  Its not the quickest recipe and can be a bit cumbersome, but the end result is so worth the effort!  However, today I found myself seriously craving some spicy, tangy, cheesy, chicken-y goodness… at about 4 p.m.  With no time to slow cook chicken for 6.5 hours and lacking …

A Fresh Start

You know when you’re not physically ill but, for whatever reason, you’re just not feeling so hot?   My mom’s response to complaints of these sorts of general feelings of malaise is always the same:  ”Take a shower – you’ll feel better!”  I like to think of it as her version of Gus Portokalos‘ “put some Windex on it!”

Anyhoo, I used to roll my eyes at this suggestion, but – as with many things in life – mom’s advice works …

Greetings from 2010, Lovely EADL Readers!

To say its been a while would be somewhat of an understatement, but there’s been some upheaval in our little household that’s kept me a bit preoccupied as of late.  Like so many this year, I was let go from my firm right after Thanksgiving.  While the day-to-day emotions after such a blow to your professional life can be depressing, I am thankful that the split was an amicable one, that Evs has a secure job which …
