I love eating substantial salads in the summertime. Sometimes it’s just too hot to want anything more than cooling greens and a refreshing cocktail.  Here’s one of my favorite recipes that revitalizes and nourishes all at once, courtesy of zesty orange and so-good-for-you-it-hurts farro. Bonus: this salad packs such a big punch nutritionally that you might as well have two of those refreshing cocktails. Go ahead, you deserve it!
